Ahhh all the tastes of fall in one dish! COUNT ME IN!
So this past weekend I made my way to my local Trader Joes!! I don't typically shop there...but I like to go once a month to find some special goodies and seasonal favorites (well...and to stock up on my Cocoa Swirl Cookie Butter). In my wandering, I came across these AHHHHMAZZINNG Cranberry Turkey Sausages. At 80 calories: 1.5 F, 4C, and 12 P I knew I could have some fun with these into my macros!
I've been wanting to make a Sweet Potato Has for a while now, but didn't know what protein to add to make it a meal...UNTIL NOW! I knew that chopping up some of this sweet flavored sausage would go awesome with sweet potato! So I chopped some up and threw it in a skillet along with some coconut oil. Something was missing...fruit! Since there is apple in the sausage I knew some fresh chopped apple would bring out the flavor... so threw some diced apple in the pan too! To spice and flavor everything..some pepper, salt, cinnamon, and a wee bit of Apple Flavor Extract! The texture wasn't quite crispy enough yet so I threw the skillet in the oven to bake in order to make it a wee but crispier... BAMMMM! SO MUCH FLAVOR! And of course.. what is sweet potato without some melted Peanut Butter on top.. so I finished it of with a JIF Maple Whips PB drizzle! So good!!! Healthy fats, carbs, proteins...alllll the fall deliciousness!!!!
Cranberry Apple Sausage and Sweet Potato Hash
Recipe:
1 Trader Joes Cranberry Apple Sausage
1 Sweet Potato Chopped
1/2 Apple Chopped
1 tsp Coconut Oil
1/8 tsp Apple Flavoring
Cinnamon, Salt, Pepper
Topping (Optional..but its delicious!): Melted Peanut Butter
Directions:
Heat skillet to medium heat and place coconut oil in pan
Put cinnamon and apple extract in pan
Heat oven to the "Broil-High" setting
Chop the sausage, sweet potato, and apple into bite size pieces and place in skillet
Season with salt, pepper, and more cinnamon
Saute until golden brown and sausage is fully cooked
Put skillet into oven OR place the hash mixture onto a baking sheet and put in oven for 5 minutes
Serve with a drizzle of Peanut Butter if desired! (HIGHLY RECOMMENDED)
