So today I was really feeling a nice big bowl of soup....now that fine and dany but I know I ned more food than just a can of soup... so what to make that would add some protein?? I love corn bread with soup... but protein? Not sure.... so why not make PROTEIN CORN BREAD <3 Texture was perfectly fluffy and moist like corn bread.. and nice and sweet too! Makes 1 mini loaf for 2 servings! Recipe for Protein Corn Bread (Technically makes 2 servings.. although easily 1 serving w/ these macros) 1/4c (38g) Corn Bread Mix (Jiffy brand is great!) About 1 scoop Cellucor Vanilla OR Cinnamon Swirl Protein (30g) 1/4 tsp Baking Powder 15g Liquid Egg or Liquid Egg Whites 40mL Unsweetened Almond Milk (OR milk of choice) 1/4tsp Butter or Vanilla Extract Mix all ingredients in a bowl until smooth. Pour into a small greased/sprayed baking dish or mini loaf pan. Bake at 350 for 25-35 mins (until toothpick comes out clean and top is golden brown) ENJOY with soup or chili... or pair with butter for a great snack! Guess who got a donut baking pan??? MEEEEEEEEEEE!!! I am so excited! Of course I had to whip up a quick test batch! So I used some Cellucor Corfetti Whey, Bisquick, egg whites, and baking powder for the base! Added vanilla extract and Princess Cake emulsion for flavorings and baked in the pan! Turned out to be more the donut shaped pancakes (because that happens when you use pancake mix....) but they were still good! I topped them with a greek yogurt icing and sprinkles!!! Recipe is still being perfected so I will keep working on it! But here's a pretty picture because well they looked awesome!
THIS IS ONE SERVING!!!!!! I REPEAT YOU CAN ENJOY THIS WHOLE CAKE FOR ONE SERVING...GUILT FREE!!! That's right! I bought some mini loaf pans and experimented with a protein loaf recipe!!! Of course it had to be cake batter first! Whipped out my Cellucor Corfetti Cake Batter whey, some flour/pancake mix(your choice),egg whites, milk, baking powder, flavorings and baked it up! HOLY YUM! Topped it all off with a Protein glaze and melted Peanut Butter for a huge serving a dessert heaven! Full recipe and macros below! Of course it can be so many flavors! Chocolate, strawberry, Cookies and Creme, Smores.. YOUR CHOICE! Just use that as your Whey and flavorings :)

It also cooked very nicely leaving a nice texture: soft on the inside with a nice crust on the outside! It also blended very nicely as I was preparing it, leaving no clumps! I highly recommend baking or cooking with this flavor! It was good on it's own mixed with milk or water as a protein shake, BUT the flavor is perfect for making protein pancakes, coconut chicken or shrimp, and more! I can't wait to keep trying new recipes with this one! As you know... I am a HUGE fan of Quest Bars! THey are so delicious, healthy, and good for on the go snacking! Their high protein and low carb (because of fiber count) make them very macro friendly! However, at 3 bucks a bar they can get a wee bit out of budget sometimes. I am an ambassador for Quest and I love the brand DON'T ME WRONG.. (I HEART QUEST)... but that is why I figured out a way to make my own too! Using a secret ingredient plus your own protein powder and flavorings... and you can create your own Quest Bars! So What is this secret ingredient?? It's called "Sweet-It Vitafiber"! I was in the mood for pizza...but also my ebelskivers, SOOOOO the Pizza Ebelskiver was born! Stuffed with lean ground turkey and Pizza Blend cheese, these gives you the pizza taste you crave with a high protein and healthy outer puff crust that is to die for!! Poppable puff pizza? (no lower body...stupid foot boot!!!).. so I decided to listen to my body because it's always right? ;) Chocolate protein ebleskivers..stuffed with chocolate chips and crushed Oreo pieces...topped with Trader Joes Cocoa Swirl Cookie Butter...and some Sugar Free Syrup! If you like chocolate... make these pronto!
HOLY HEAVEN ON EARTH! I have perfected my healthy cinnamon roll recipe!!!! NO GUILT AT ALL ON THESE BABIES! You can eat all 12 by yourself and STILL have wayyyy better macros than 2 regular cinnamon rolls made from pre-packaged cinnamon rolls like Pillsbury. 2 "Pillsbury Cinnamon rolls with Cinnabon Cinnamon and icing" of those will give you: 280 calories--10gF, 46gC, and 4gP. NOT ANYMORE! With my Protein Cinnamon rolls you can eat 12 (YES 12!) with icing for 240 calories, 2gF, 19gC, and 42gP!!!! THATS INSANE! WOOOOOOO! Get on these now! You won't be dissapointed!
DIRECTIONS: Blend all dough ingredients together (IT WILL BE WATERY) In a large non stick sprayed skillet pan on LOW heat, pour all batter into skillet (LIKE A GIANT PANCAKE) COVER with a lid or another pan (as shown)----------------> Cook until you can easily take off pan and "Pancake" is rollable... about 5-7 minutes ***check after 5 minutes to ensure not over cooked but top can't be liquidy!*** Take off pan and place on a flat surface. Coat "Pancake" with the cinnamon/syrup filling. Roll "hot dog" style and cut into 12 "Rolls" Bake at 350 for 15 mins. THEN take out... flip all of them over.... and BAKE AGAIN for 10 minutes!
Top with "frosting" which is all the "frosting ingredients" just mixed together! SERVE by faceplanting the fact that you get 12 Cinnamon rolls ALL TO YOURSELF!!! :) Are you really surprised that its another Ebleskiver recipe???? You can get so created with flavors that I'm having so much fun coming up with new version! This time... I wanted to use up my extra shredded coconut! SOOO bring on Coconut Protein Ebleskivers!
Coconut Protein Ebleskivers Ingredients: 26g (1/4c) Kodiak Power Cakes pancake mix 17g Cellucor Cinnamon Swirl Protien Powder 1/8 tsp Baking soda 1/8 tsp Baking Powder 2 packets of Stevia 26g(1.5 tbsp) liquid Egg Whites 1 tsp Coconut Extract 1g Shredded Coconut 1 TBSP Almond Milk 4 TBSP Water 1/8 tsp Xantham Gum Filling: 1/4 (15g) Coconut Cashew Quest Bar Toppings: Walden Farms Sugar Free Pancake Syrup, 1g Shredded Coconut, 7g Cracked Nut Butter Directions: Heat Ebleskiver pan to medium Cut Coconut Quest Bar into 7 chunks Blend or mix all ingredients EXCEPT for shredded coconut and Quest Bar into a batter Place 1 TBSP of batter in each mold Put shredded coconut on each puff Put 1 piece of Quest Bar in each mold Cook till golden brown and flip--cook other side Plate and top with toppings--ENJOY!!
