With all this hype around the "healthy" ice cream craze I wanted to see if it would work with Arctic Zero since it is milk but no fat... so lets see how it goes right? WELL IT WORKED PERFECTLY! I think I found the magic way to keep protein muffins moist! ARCTIC ZERO!
-60g of preferred pancake mix/flour/oat flour that fits macros (I used combo of Kodiak cakes and sugar free maple groves)
-3/4tsp Baking Powder
-1/2 tsp sweetener
-1/4tsp cinnamon
-30g arctic zero flavor of choice
-1tbsp milk (almond, cashew, skim etc)
-1tbsp water(COLD)
-flavorings and fillings of choice (I did walden farms Chocolate syrup and blueberries).. Get creative based on macros!! Nuts, fruit, cookies, chocolate, etc!
-mix all dry ingredients in a bowl
-in a separate bowl melt arctic zero in microwave for 15-30 secs
-stir into dry ingredients
-add milk and water... Should be a thick batter
-add flavorings and mix ins
*****PLACE IN FRIDGE TO COOL FOR 5 MINS*****
-pour evenly into 4 muffin tins
-bake at 375 until toothpick comes out clean like 20-30 mins
Macros for ALL FOUR(again mine were chocolate blueberry): 250 cals- 35C,24P,5F!
