So for my macros today I really wanted a big dessert bowl which included my favorites: greek yogurt, a pop tart, limited edition sugar cookie toast crunch cereal, peanut butter, and cinnamon swirl protein bread (recipe under protein powder recipes)... Which means that my dinner had to bit a bit lighter (hey macros for a reason!!! Indulge in what I want while still eating what my body needs! Make everything fit!)
ANYWAY... I saw on pinterest (my love) a recipe for Cauliflower "rice" a while back... but it called for a dood processor that I never had... UNTIL XMAS! :DDDD So I pulled the recipe from the dusty cookbook and added my own spin to it to add protein and veggies :)
Seafood Cauliflower Fried Rice!! I added some Trader Joe's Seafood blend and some Trader Joe's chicken potstickers to the recipe for a complete meal! :) ENJOY!!

Healthy "Fried" Rice
200g Raw Cauliflower
1-2g Coconut oil (doesnt take much in the pan!)
20g Frozen Peas
23g Chopped Carrots
28g (1C) Raw Spinach
46g (3 TBSP) Liquid Egg (or 1 egg)
1 TBSP Sweet and Sour Sauce mixed w/ 2 TBSP Water
1.5 TBSP Liquid Aminos (or soy sauce)
1 tsp Apple Cidar Vinegar
OPTIONAL: Seafood blend, chicken, ground turkey, or protein of choice
Chop cauliflower in a food processor until it forms a rice or couscous texture!
In a pan, sauté peas, carrots, and spinach (and protein of choice is desired). Add liquid egg or egg and scramble. SET ASIDE.
Then added the cauliflower "rice" along with 1 TBSP liquid aminos, 1 TBSP sweet and sour sauce/2 TBSP of water, and apple cider vinegar. Heat until slightly softened and hot. Add in veggie/egg mixture and stir.
Serve and DEVOUR!!!
