So this week, I wanted to try and make as many things completely from scratch as possible for fun! Again, I love to bake and cook so why not try things from scratch here and there!
I was in the mood for tacos (anybody else get these weird cravings???) so as I have been trying to do, I listened to my body and gave it what it wanted! TACO NIGHT! <3
Since tacos are typically all store bought items (shells, rice, beans...now they even have taco meat to buy)... I knew it would be a challenge to try and make as much of it from scratch as possible... SOOOO I GIVE YOU...
HOMEMADE TORTILLAS AND SPANISH "CAULIFLOWER" RICE

HOMEMADE TORTILLAS AND SPANISH "CAULIFLOWER" RICE
Homemade High Protein Coconut Flour Tortillas (Gluten Free, Dairy-Free)
| Blend all ingredients in a mini blender or food processor until a smooth batter forms (will be pretty thin) On a medium heat pan, pour 1/3 of batter into pan and spread out thin by rotating pan in a circle. When top no longer appears shiny, flip over and cook other side Repeat 2 more times for 3 total tortillas Macros: 150 cals-- 2F, 9C, 15p |
Spanish Cauliflower "Rice" Cauliflower - Raw, 1.5C or 150 g(s) Trader Joe's - Organic Tomatoes - Diced & No Salt Added- 1/4C or 55g Cilantro- a few leaves Mexican Seasoning- 1/8 tsp | In a food processor, blend/grate Cauliflower until a rice or couscous texture is created Add into tomatoes, cilantro, and seasonings Blend until incorporated but not to ruin the couscous like texture Heat in microwave or on a skillet until warm |
I love fish tacos so I baked some tilapia and stuffed the tortillas with tilapia, spinach, berry salsa, and avocado (HEALTHY FATS people!!) then served it with the cauliflower rice! YUMMM!
So there's what is for dinner tonight ya'll! Enjoy! Even tacos can be made from scratch! Don't be afraid to take time to make stuff at home vs buying! There is nothing wrong with store bought items (and honestly I don't waste money on Organic).. but sometimes it's fun to create your own food! Give it a shot! You might surprise yourself!
