PUMPKIN PUMPKIN PUMPKIN! I <3 PUMPKIN! Fall is my favorite time of year because there is pumpkin spice everything!!!! From Starbucks' Pumpkin Spice Latte, to cookies and pie, coffee creamers, bagels, bread, peanut butter, candy, cereals...you name it right now there is probably a pumpkin version! SOOO in honor of the fall season, I changed up some of the ingredients in my Ebleskiver recipe to make a pumpkin spice version!!!! Crunchy outside...soft inside... gooey pumpkin butter, Pumpkin Spice peanut butter, and a pumpkin spice maple syrup... can't get much better!!!
Super Pumpkin Spice Protein Ebleskivers Ingredients: 1/4C Kodiak Protein Pancake mix (find at Target) 1/2 Scoop Cellucor Whey Cinnamon Swirl Protein Powder 1 TBSP 100% Pumpkin Puree 1 TBSP Almond Milk 3 TBSP Water 1/8 tsp Baking Soda 1/8 tsp Baking Powder 1/4 tsp Pumpkin Spice Extract 1/4 tsp Archer Farms (Target) Pumpkin Spice Sugar Free Coffee Syrup 1 Packet Stevia 1/8 tsp Xantham Gum Filling: 1 TBSP Pumpkin Butter (Trader Joes) Toppings: JIF Pumpkin Spice Whips Peanut Butter and Pumpkin Spice Maple Syrup Pumpkin Spice Syrup -2 TBSP Walden Farms Sugar Free Pancake Syrup -1/4 tsp Archer Farms Sugar Free Pumpkin Spice Coffee Syrup (Target) -1/8 tsp maple flavoring | Directions: -Heat Ebleskiver or pancake griddle(for pancake version) to medium heat -Mix all ingredients in blender, food processor, or hand mixer except for filling and syrup - Place 1 TBSP in each round mold -Place a little bit of Pumpkin Butter in the middle of each mold -top each mold with remaining batter -Cook until golden brown and flip each ball -Cook until golden brown and plate! -Top with Syrup and Peanut Butter... ENJOY! Directions for syrup -Mix syrup and flavorings until combined -microwave for 20 seconds -top ebleskivers with syrup!
