(no lower body...stupid foot boot!!!).. so I decided to listen to my body because it's always right? ;) Chocolate protein ebleskivers..stuffed with chocolate chips and crushed Oreo pieces...topped with Trader Joes Cocoa Swirl Cookie Butter...and some Sugar Free Syrup! If you like chocolate... make these pronto!
Super Stuffed Chocolate Protein Ebleskivers! Ingredients: 26g (1/4c) Kodiak Power Pancake mix 17g (1/2 scoop) Cellucor Molten Chocolate Protein Powder 26g Liquid Egg Whites (a little less than 1 egg white) 1 TBSP Almond Milk 4 TBSP Water 1/2 tsp Cocoa Powder 1 packet Stevia (1 tsp) 1/8 tsp baking powder 1/8 tsp baking Soda 2 pinches of Xantham gum (a little under 1/8 tsp) 1 tsp Chocolate Flavoring/Extract 1/4 tsp butter flavoring/extract Filling: ***a little goes a long way**** Crushed Oreos (1/2 oreo) Mini Dark Chocolate Chips (5g) Topping: Trader Joes Cocoa Swirl Cookie Butter, Walden Farms Sugar Free Pancake Syrup | Directions: Blend all "ingredients" or with a mix *Magic bullet is amazing for these!* Heat Ebleskiver Pan to low/medium heat and spray with non stick spray or use coconut oil Put 1 TBSP of batter in each mold Fill with crushed oreos and chocolate chips *Leave a little bit to top later* Top with remaining batter Flip and cook other half of the puff Plate and top with Cocoa Swirl Cookie Butter, Syrup, and remaining chocolate chips and oreo crumbles!
